Apple & Goat Cheese Salad with Toasted Walnuts Nuts
1/2 cup balsamic vinegar
1 1/2 cup olive oil
kosher salt, to taste
ground black pepper, to taste
1 bunch of spinach
1 red onion, cut in half then sliced into thin strips (1/2 moons)
2 Honeycrisp apples, peeled and chopped
½ cup dried cherries
8 oz. goat cheese, crumbled
¼ cup toasted walnuts
2 sprigs fresh thyme, chopped
1. Puree first 4 ingredients in food processor except for oil.
2. When smooth, slowly incorporate the oil.
3. Toss everything together.
