Molasses Cookies

Molasses Cookies
¾ cup butter
1 cup packed brown sugar
½ cup white sugar
1 large egg
½ cup molasses
½ cups flour
½ teaspoon salt
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon cardamon 
1 teaspoon ground ginger
½ teaspoon ground cloves
1 teaspoon nutmeg
1.     Cream together butter and brown sugar.
2.     Stir in egg and molasses and mix well.
3.     Fold in dry ingredients and stir.
4.     Cover and chill till firm (1-2 hours).
5.     Preheat oven to 350°.
6.     Roll dough into small balls and roll in white sugar.
7.     Place on lightly greased cookie sheet.
8.     Bake at 350°F for 9-10 minutes.
9.     Leave on sheet one minute until set.

Ginger Cookies

Ginger Cookies

2 ¼ cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
¾ teaspoon ground cinnamon
½ teaspoon ground cloves
¼ teaspoon salt
¾ cup butter softened
1 cup white sugar
1 tablespoon of minced candied ginger
1 egg
1 tablespoon water
¼ cup molasses
2 tablespoons white sugar

1. Preheat oven to 350 degrees F.
2. Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
3. In a large bowl, cream together the butter and 1 cup sugar until light and fluffy.
4. Beat in the candied ginger and egg, then stir in the water and molasses.
5. Gradually stir the sifted ingredients into the molasses mixture.
6. Shape dough into walnut-sized balls, and roll them in the remaining 2 tablespoons of sugar.
7. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
8. Bake for 8 to 10 minutes in the preheated oven.
9. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
10. Store in an airtight container.

One of my favorite cookies as a kid.  Loved eating them when they were still warm out of the oven.  Trying to wait until they were cool enough to eat.

1 teaspoon nutmeg
1. Cream together butter and brown sugar.
2. Stir in egg and molasses and mix well.
3. Fold in dry ingredients and stir.
