Apricot Lentil Soup
3 tablespoon olive oil
1 large onion, chopped
2 cloves garlic, minced
1/3 cup dried apricots
1 ½ cups red lentils, rinsed
4 cups vegetable stock
1 carrot diced
1 small potato diced
½ tsp ground cumin
½ tsp dried thyme
½ tsp salt and ground black pepper
2 tablespoon lemon juice
1. Saute onion, garlic, and apricots in olive oil.
2. Add lentils, stock, carrots, and potatoes.
3. Bring to a boil, then reduce heat and simmer 30 minutes.
4. Add cumin, thyme, salt, and pepper to taste; simmer 10 minutes more.
5. Add lemon juice.
